Another Brandied Fruit Recipe
A good holiday dessert. Versitile. Can be used as a topping over ice cream, or with ice cream and waffles, whatever. But start it now, as it must age.

Ingredients
  • 1 15 1/4 oz can pineapple chunks, drained
  • 1 16 ob can sliced peaches, drained
  • 1 15 1/4 oz can apricot halves, drained
  • 1 10 oz jar maraschino cherries, drained
  • 1 1/4 cup sugar
  • 1 1/4 cup brandy, or whiskey

Directions
  1. Combine all ingredients in a clean, non metal container. Stir gently. Cover and let stand at room temperatore for at least 3 weeks. Stir the fruit twice a week. Serve over ice cream or pound cake, or gingerbread waffles with ice cream. Reserve at least 1 cup starter at all times.
  2. This is an ongoing culture. To replenish the starter, add 1 cup sugar and 1 of the first 4 ingredients every 1 to 3 weeks. alternating fruits each time. Stir gently. Cover and let stand at room temperature at least 3 days before using.
  3. Yield, 6 cups.
  4. Apricot or peach brandy may be substituted, if desired. My preference is Jack Daniels.
