Almond Cake with Apricot Brandy Sauce

- For cake: shopping list
- 3/4c butter shopping list
- 1c sugar shopping list
- 2 lg eggs plus 1 lg yolk shopping list
- 1/2c apricot preserves shopping list
- 1/3c sour cream shopping list
- 1tsp pure vanilla shopping list
- 13/4c flour3/4tsp baking powder shopping list
- 1(7oz) tube almond paste,crumbled shopping list
- confectioners sugar,toasted almond slices and blackberries for garnish shopping list
- For sauce: shopping list
- 1/4c butter shopping list
- 1c brown sugar shopping list
- 1/3c heavy cream shopping list
- 1/4c peach brandy shopping list
- 1/4c peach preserves shopping list
How to make it
- Make cake: Preheat oven to 350. Lightly butter a 9" round cake pan;set aside. Beat butter and sugar in a large bowl with electric mixer at med. speed until pale and fluffy,about 3 to 4 mins.
- Add eggs and yolk,one at a time,beating well after each addition. Add the preserves,sour cream,and extract and beat for 1 min. more. Stir together the flour,baking powder,and salt;add to batter along with almond paste and fold till just combined. Spread evenly in prepared pan and bake 45 to 55 mins. or till center of cake is firm when the pan is lightly tapped.(Note: The cake will be very moist in center because of almond paste.
- Make Sauce: Melt butter in med. saucepan. Stir in brown sugar and cook 2 mins. Stir in remaining ingredients and simmer over low heat for a few mins. more.
- To serve: Lightly dust confectioners sugar on top of cake,sprinkle with almonds and blaxkberries,and serve each slice,drizzled with some of the sauce.
