Crispy Turkey Tostadas Recipe
Another recipe posted by USA Today. I've never used canned tomatoes to make tostadas, but my husband will eat anything.

Ingredients
  • 1 14-ounce can Petite Diced Tomatoes, preferably with Jalepenos
  • 1 medium Onion, thinly sliced
  • 3 cups shredded cooked Turkey or Chicken
  • 8 Corn Torillas
  • Canola or Olive Oil Cooking Spray
  • 1 Avocado, pitted
  • 1 cup prepared Salsa
  • 2 Tbsp. reduced-fat Sour Cream
  • 2 Tbsp. chopped fresh Cilantro (can omit this)
  • 1 cup shredded Romain Lettuce
  • 1 cup shredded Monterey Jack Cheese

Directions
  1. Position racks in the upper and lower thirds of the oven; preheat to 375 degrees.
  2. Bring tomatoes and their juice to a boil in a medium saucepan over medium heat.
  3. Add onion and cook, stirring occasionally, until the onion is soft and most of the liquid has evaporated, 15 to 20 minutes.
  4. Add turkey (or chicken) and cook until heated through, 1 to 2 minutes.
  5. Meanwhile, coat tortillas on both sides with cooking spray.
  6. Divide the tortillas between two large baking sheets.
  7. Bake, turning once, until crisped and lightly brown, about 10 minutes.
  8. Mash avocado in a bowl.
  9. Stir in salsa, sour cream and cilantro until combined.
  10. To assemble tostadas, spread each crisped tortillas with avocado mixture.
  11. Top with turkey (or chicken) mixture, lettuce and cheese.
  12. Tip: To poach chicken breasts, place boneless, skinless chicken breasts in a medium skillet or saucepan. Add lightly salted water to cover and bring to a boil. Cover, reduce heat to low and simmer gently until chicken is cooked through and no longer pink in the middle, 10 to 12 minutes.

This sounds delicious! Would you by any chance know how to make a good "chili colorado" sauce? I'd love to see a post for the recipe, if you have one. Thanks for the tostada recipe!


I can see why the person on your home page raved about this one - simple, but great tastes...I believe this will be going on the table this next week!! I've never tried baking a corn tortilla, so this will be a learning experience as well...thanks, chihuahua.
