Ingredients
  • 2 c. Chicken broth
  • 1 c. Yellow cornmeal
  • 1T. Chopped fresh cilantro
  • 1/2 lb. Pork sausage links (cut into bite size pieces)
  • 1 lb. Beef Stew meat; (cut into bite size pieces)
  • 1 Onion, chopped
  • 1/2 c. Finely chopped celery
  • 1 Mild green chile pepper, seeded and chopped
  • 1/2 c .Chopped sun-dried tomatoes
  • 1 can (2.5 oz) sliced ripe Olives; drained
  • 1/2 t. Salt
  • 1/8 t. Pepper
  • optional garnishes:
  • sourcream
  • sliced green onions
  • chopped tomato
  • shredded cheese

Directions
  1. Bring broth to boil in medium saucepan.
  2. Stirring constantly, slowly add cornmeal.
  3. Simmer mixture 5 minutes, stirring often.
  4. Stir in cilantro.
  5. Using a greased spatula, spread cornmeal mixture on bottom and about 2 "up sides of crockpot.
  6. In large bowl, combine sausage, stew meat, onion, celery, chile pepper, sun-dried tomatoes, sliced olives, salt and pepper. Carefully spoon into center of cornmeal-lined pot.
  7. Cover and cook on low setting 7 to 8 hours.
  8. Garnish as desired.

Sounds good- My dad would love this. I marking it to make!


This is a delicious sounding recipe, that I haven't seen in any of my crock books! It gets a high 5 on my list! I will be trying it out this week...THANKS FOR THE GREAT POST!
