Crockpot Pina Colada Bread Pudding Recipe
I'm a girl that just loves a pina colada ... in any form! I like to garnish this with toasted coconut.

Ingredients
  • 1 lb Loaf french bread
  • 10 oz Frozen pina colada drink mix
  • 6 oz .Pineapple juice
  • 12 oz .Evaporated milk
  • 1/2 c. Cream of coconut
  • 2 Large bananas; sliced crossway
  • 3 Large eggs
  • 1/4 c. Light rum
  • 8 oz crushed pineapple; drained
  • 1 t. Lemon peel; grated
  • garnish with toasted coconut if desired

Directions
  1. With a sharp knife, peel crust from bread.
  2. Cut bread into 1" cubes and set aside.
  3. Process next 7 ingredients until smooth.
  4. Place about 2/3 of bread cubes in slow cooker, sprinkle with 1/2 t. grated lemon peel and spread w/ 1/2 c. of the pineapple.
  5. Top with remaining bread cubes, then with remaining 1/2 t. lemon peel & remaining pineapple.
  6. Pour pureed ingredients into slow-cooker.
  7. Cover and cook on low 6 hours.
