Ingredients
  • 1 Whole Chicken about 4-6 lbs
  • 5 or 6 sprigs fresh Thyme
  • 4 sprigs fresh Rosemary
  • 2 or 3 Bay Leaves
  • 1 TBSP fresh chopped Basil
  • 40 Cloves Garlic (do not peel)
  • 6 or so TBSP olive oil
  • 3 TBSP Water
  • Coarse ground black pepper and salt (kosher) to taste

Directions
  1. Rinse bird under cool water and pat dry
  2. In a cast iron dutch oven, heat about 4 or 5 TBSP olive oil
  3. Pre heat oven to 375 degrees Fahrenheit
  4. Put half the thyme, rosemary and bay leaves inside birds cavity
  5. Over MED/HI to HI heat quickly brown the bird on all sides as best as you can
  6. Remove from heat, place 2 or 3 garlic cloves inside cavity.
  7. Spoon drippings over bird
  8. Arrange remaining Thyme, Rosemary, Garlic and bay leaf around bird
  9. Pour about 2 TBSP olive oil over bird
  10. Sprinkle Salt, Pepper and Basil over bird
  11. Put 3 TBSP water around bird
  12. Cover tightly and place in oven
  13. Bake about 2 hours, do not open lid to peek during this time
  14. To serve, put it on platter with garlics arranged around it and have crusty bread to squeeze cooked garlic cloves onto.
  15. This meal goes very well with a hearty red wine. My choice is a Spanish Tempranillo.

I've got a similar recipe and it is really good. It's a great way to introduce someone to garlic also. I also like to take the crusty bread and dip it in the oil, then add the garlic to bread and spread like butter.
