Ingredients

How to make it

  • Cut off root part of fennel, chop the bulb and stems finely ( I used food processor ) reserve the fringy leaves
  • chop the apple in the same consistency
  • Mix apple and fennel together with some chooped walnuts
  • Moisten all with olive oil
  • Sweeten with honey
  • salt and ppper to taste
  • Best serve the first one to 2 days, after that still great but loses some crispness
  • Place in bowl and garish with fennel fronds
  • Serve well chilled

    apple and fennel is one of my most fav recipes though I make mine with just EVOO and fresh lemon and s&p. Sometimes I add fresh garlic and/or fresh hot peppers. My salad is fresh :) Glad to see that others have good taste. Happy New Year everyone~
