Tomatoes Royal Recipe
A fast easy dish for a quick apetizer or nice side dish.

Ingredients
  • 5 roma or similar sized tomatoes
  • 2 cloves minced garlic
  • 1-2 teaspoon fresh or dry oregano
  • olive oil
  • 2-3 tbs parmesan cheese
  • sea salt
  • fresh ground pepper

Directions
  1. pre heat oven or gas grill or bbq to 400
  2. cut tomatoes in half along the equator
  3. set tomatoes cut side up in shallow baking dish or aluminum pie plate
  4. on top of each tomato distribute minced garlic evenly (garlic can be fresh or from a jar) Repeat this process with the oregano ( again i have used fresh or dried with good results). Season to taste with sea salt and ground pepper
  5. now drizzle with extra virgin olive oil, and top with the grated parmesan
  6. Place tomatoes in oven or grill let cook for ten to 15 min or the sides are soft.
  7. carefully remove one at a time being careful not to squeeze to tightly.
  8. Serve with garlic toast or your meal.
  9. I have substituted feta crumbles for the parmesan and received rave reviews as well.
  10. really easy and tastes fantastic.
