Lamb And Potato Skillet Recipe
I learned this one from my little Irish Grandmother, so good! Serve this with Spinach, makes a yummy complete meal! While this calls for leek, not everyone cares for it, so you might want to use green onions instead.

Ingredients
  • 1 pound ground lamb
  • 1 medium leek, chopped -OR-
  • 2 green onions (your choice)
  • 1 garlic clove, finely chopped -OR-
  • 1 tsp minced garlic (either way is good)
  • 3/4 cup NSA beef broth
  • 1/4 cup red wine (try a burgandy or Cabernet Sauvigon)
  • 1 tablespoon chopped fresh dill weed or 1 teaspoon dried dill weed
  • 1/2 teaspoon Mrs. Dash Garlic Herb
  • 1/4 teaspoon pepper
  • 1/4 teaspoon onion powder
  • 3 medium potatoes, cut into 1/4-inch pieces (3 cups)
  • 1 dried bay leaf
  • 1 small can NSA tomato sauce
  • 1/4- 1/2 head of shredded cabbage
  • (and this wouldn't be a Nina recipe without the optional mushrooms !! - quantity and type based on your preferences! )

Directions
  1. In a 10 inch skillet cook lamb, leek, garlic and those optional mushrooms over medium heat, stirring frequently, until lamb is brown; drain
  2. Stir remaining ingredients except tomatoe sause into the lamb mixture.
  3. Bring to a boil; reduce heat. Cover and simmer, stirring occasionally, until potatoes are tender.
  4. Remove bay leaf. Stir in tomatoe sauce; heat through.
