Cream Puffs Like Mom Makes Recipe Marriage / All my dishes

My mom has always made these and every one who has ever had one raves about them. They are fast to make and impressive to boot Yum yum another family favorite.

Ingredients
  • Pastry
  • 1/2 cup butter
  • 1/8 teaspoon salt
  • 1 cup boiling water
  • 1 cup siftedall purpose flour
  • 4 eggs
  • Filling
  • 1 or 2 packages of vanilla instant pudding (this depends on how stuffed you want your puff)
  • 1 8 oz. package of cream cheese, softened
  • milk per pudding package instructions

Directions
  1. Preheat oven to 450 degrees
  2. In medium saucepan, combine butter, salt and boiling water
  3. Heat this mixture until all ingredient are at a boil.
  4. Reduce heat and add the flour all at once making sure to stir vigorously until mixture forms a ball.
  5. Remove that from the heat and add eggs in one at a time making sure to beat thoroughly after each egg.
  6. Continue beating untl dough is thick and shiney and breaks away from the spoon.
  7. Using a rounded tablespoon drop dough onto an ungreased cookie sheet.
  8. Bake at 450 for 20 minutes then reduce heat to 350 and bake another 20 minutes.
  9. Filling:
  10. make your pudding per package
  11. add in softened cream cheese blend together well
  12. Slice open cream puff stuff with pudding mixture and serve
  13. cool whip is always nice too.

I've always wanted to get my cream puff right, but have been frustrated with really bad baking attempts. The last I made had holes at the bottom (I piped it with a pastry bag) and just stopped trying. Will give your recipe a try. Hope i get it right this time. Thanks for reminding me that i shouldn't give up on learning this recipe!
