These rum balls will make you rumble! They make excellent Christmas gifts. Best made a few weeks in advance so the flavours mix.

Ingredients
  • 225g arrow root or rich tea biscuits crushed.
  • 1.5 cups/75g Rice Krispies or Cornflakes
  • 2 tbsps /20g cocoa
  • 3 tbsp /20g rum
  • 1 tsp cinnamon
  • 1 tsp mixed spice (all spice)
  • 1.5 cups /150g mixed fruit
  • 1 cup /75g shredded/desiccated coconut
  • 1 x 395g can sweetened condensed milk
  • Ice with white icing and red and green sweets.

Directions
  1. Crush the biscuits- I put them in a large bowl and bash them with the end of a rolling pin. Then crumble the big bits with my hands.
  2. Add the Rice Krispies, cocoa, spices and coconut. Mix.
  3. In a separate bowl mix the rum and the mixed fruit. (Leaving it for a while is best so the fruit absorbs the rum). Then add to the dry ingredients.
  4. Mix everything well and add condensed milk.
  5. Mix well until all coated.
  6. I squash mixture into my silicon cup-cake molds.
  7. Makes 20 good-sized rum-balls.
  8. No cooking required!
  9. These are best kept for a few days or even a couple of weeks (yes!) Store in an air tight container in the fridge and decorate when needed.
  10. Decorate with white icing sugar (mixed with a little water) and red and green sweets.

Is the mixed fruit supposed to be the raisins ?.....in the list of ingredients there were no mention of raisins...just mixed fruit.
Please let me know...I'd like to make these for my son's teachers for Xmas.
