How to make it

  • Combine the mayonnaise, cream cheese, single cream, lemon juice and horseradish sauce.
  • Add the parsley, celery, shrimp, salt and pepper, mix gently and then chill for at least one hour before serving.
  • To Serve:
  • Slice the tomatoes into wedges, but do not slice all the way through to the bottom.
  • Fill each tomato with the shrimp salad, place on a bed of baby lettuce leaves and garnish with the lemon wedges and egg slices and serve.

    Wow I bet this makes a beatiful presentation. Tomato season is coming right up what a wonderful idea. The seasonings sound perfect.

    A cool shrimp salad stuffed in a just-picked vine-ripened tomato on a hot summer day is the best luncheon, in my opinion...I can see why this would be Lady Hanson's favorite - now I just have to wait until about July for fresh tomatoes around here (but I'm patient!)...thank you, astro.
