~~A very easy, and spicy, soup to put together. It can easily be vegetarian by using veggie stock, or, it's also great with strips of steak, added. I LOVE this served with a dollop of sour cream and a simple cheese quesadilla. :)

Ingredients
  • 30-45oz black beans, undrained(depending on the size of the cans :)
  • 1/2 cup red onion, diced
  • 4-6 cloves garlic, minced
  • 1-4T jarred jalapeno peppers, diced(this will determine most of the heat, so use to your taste)
  • 1 cup beef stock
  • 2t brown sugar
  • juice from 1 lime
  • couple dashes red wine vinegar
  • 1-2t chili powder
  • 1t/2-1t cayenne
  • 1/4 cup fresh cilantro, chopped
  • salt
  • sour cream for serving

Directions
  1. Combine all ingredients besides lime juice, salt , cilantro and sour cream in large saucepan and heat to high simmer.
  2. Simmer 30-60 minutes, adding salt cilantro and lime juice in the last few minutes.
  3. Garnish with sour cream.
  4. *This can also be made in a slow cooker but will only need to cook a couple our hours, adding juice, salt and cilantro just prior to serving.

I love black beans! This sounds like exactly what I had in mind to make with my big 'ol' leftover chicken breast. Spicy too. Thanks Keni, (Jake would love this) ;')


Boy was this good! Had my wisdom teeth out so was looking for a soothing warm soup...and this did the trick!!! My husband..who has to have meat with every meal, had a big bowl of this and was, can you believe it, SATISFIED!!! Thanks Keni, you work miracles!!
