Ingredients

Salmon And Scrambled Egg:

Top 16 slices of well buttered white bread with 1 pound smoked salmon and 8 eggs scrambled with cream,pinch of salt and pepper.

Garnish with fresh dill sprigs.

Savory Ham:

Spread a mixture of 1/4 cup butter and 2 Tablespoons of sharp mustard on 16 slices of pumpernickel bread.Place 1 pound of sliced boiled ham over and top with hard-cooked egg slices and sliced radishes.

Garnish the parsley.

Smoked Turkey:

Spread 16 slices whole-wheat bread with butter,place 1 pound of sliced smoked turkey over the buttered bread and top with a strip of crisply cooked bacon.

Garnish with sliced mushrooms

Cheese and Ham:

Spread 16 slices of rye bread with butter,arrange 1 pound of sliced havarti cheese and 1/2 pound of sliced boiled ham on the bread.

Garnish with radish slices.

Rejer:

Spread 16 slices of rye bread with a mixture of 6 Tablespoons of mayonnaise,2Tablespoons of lemon juice,and 2 teaspoons of dillweed.Pile with 2 pounds of cooked and drained,(chilled before) tiny shrimp,drizzle with lemon juice.

Garnish with lemon peel twists.

Directions

Place the sandwiches on large cookie sheets.

Cover with plastic wrap and refrigerate until serving time.

Arrange the assortment of sandwiches on your best platters.

Garnish the platters with rolls of cold meats,cherry tomatoes.

Serve with fruit compote,coffee,hot tea,fruit juice,and of course Champagne!
