Rice balls patties

- 300 gr rice. shopping list
- 1 pack saffron 0.25 gr ground or threads. shopping list
- 2 eggs beaten. shopping list

- 50 gr parmesan shredded (or any other hard old cheese). shopping list
- 250 gr ground meat (veal). shopping list
- 1 little onion (thinly sliced). shopping list
- 2 cloves garlic (thinly sliced). shopping list
- 2 tbs tomato paste. shopping list
- 20 gr mushrooms chopped. shopping list
- 1/2 c dry red whine. shopping list
- 100 gr motsarella cheese cut in small cubes drained. shopping list
- 3 tbs cooked green peas. shopping list
- 1 c bread crumbs. shopping list
- 1 c flour. shopping list
- 4 tbs olive oil. shopping list
- salt and pepper to taste. shopping list
How to make it
- Cook rice ca 10 min in salted water, drain and mix with saffron and 2 beaten eggs, set aside.
- Saute onion and garlic in 4 tbs olive oil on low heat for 10 min till soft, add ground meat and cook/stirr till browned, pour over with the whine.
- Mix tomato paste in 1 tbs water and add to meat, cook 30 min on lowest setting (pan covered), taste with salt and pepper, if necesary add a little water , add mushrooms and cook 15 min more.
- Mix motsarella, parmesan and green peas.
- Devide rice in two parts, one part mix with meat mixture and the other with cheese/ pea mixture.
- Let cool down and then form patties, cover with flour, then put in beaten egg and cover with bread crumbs.
- Cook in deep fryer 4 min and drain from oil, put in an oven tray and bake for 5 min on 200 C.
- Serve hot, goes nice with a rose C abernet Sauvignon.
