How to make it

  • Heat oil to about 370°.
  • In a large mixing bowl, sift together the flour, baking powder, salt, and paprika.
  • In a separate bowl or large measuring cup, beat eggs lightly.
  • Whisk in milk.
  • Stir egg mixture into flour mixture until all ingredients are moistened.
  • Stir in ham, corn, and parsley.
  • Drop by heaping tablespoonfuls into hot oil.
  • Fry for 4 to 5 minutes, until crisp and browned.
  • Makes about 18 fritters.
  • Serve with applesauce or maple syrup. Or sweet & sour sauce.

    OMG, I can't believe I forgot to list the HAM!! The whole reason for the recipe in the first place! But anyway ... correction made. I usually use one of those small, individual ham steaks from the fresh meat section. Diced it makes a bit more than a cup.
