Corn And Ham Fritters Recipe

Ingredients

2 cups all-purpose flour

1 T baking powder

1 1/2 tsp salt

1/4 tsp paprika

4 eggs

3/4 cup milk

2 T melted butter

1 cup corn kernels

1 cup ham, diced

2 T chopped parsley (or 1-2 tsp dried parsley flakes)

Oil for frying

Directions

Heat oil to about 370°.

In a large mixing bowl, sift together the flour, baking powder, salt, and paprika.

In a separate bowl or large measuring cup, beat eggs lightly.

Whisk in milk.

Stir egg mixture into flour mixture until all ingredients are moistened.

Stir in ham, corn, and parsley.

Drop by heaping tablespoonfuls into hot oil.

Fry for 4 to 5 minutes, until crisp and browned.

Makes about 18 fritters.

Serve with applesauce or maple syrup. Or sweet & sour sauce.

OMG, I can't believe I forgot to list the HAM!! The whole reason for the recipe in the first place! But anyway ... correction made. I usually use one of those small, individual ham steaks from the fresh meat section. Diced it makes a bit more than a cup.
