- 225g - 2 1/2 cups coriander seeds shopping list
- 110g - 1 cup cumin seeds shopping list
- 110g - 1/4 lb large cardamoms shopping list
- 50g - 1/2 cup cinnamon shopping list
- 50g - 2/3 cups cloves shopping list
- 110g - 1 cup peppercorns shopping list
- 1tsp grated nutmeg shopping list
How to make it
- roast the coriander and cumin seeds separately in a warm oven or under a low grill or dry fry in a panfor about 3-5min.
- shake them around constantly if under a grill or in pan
- be careful not to burn seeds
- peel the cardamoms, removing husks and strawy bits.
- grind all the spices on a blender or pestle and mortar
- careful not to make the mixture too fine
- store in an airtight container
- taken from a recipe book my mother owned 30 years ago.
