How to make it

  • roast the coriander and cumin seeds separately in a warm oven or under a low grill or dry fry in a panfor about 3-5min.
  • shake them around constantly if under a grill or in pan
  • be careful not to burn seeds
  • peel the cardamoms, removing husks and strawy bits.
  • grind all the spices on a blender or pestle and mortar
  • careful not to make the mixture too fine
  • store in an airtight container
  • taken from a recipe book my mother owned 30 years ago.
