BRITISH ROCK CAKES

- The Dry shopping list
- 2 cups sifted flour shopping list
- 2 tsp. baking powder shopping list
- 1/2 tsp. mixed spice--see Notes shopping list
- 1/2 tsp. nutmeg shopping list
- pinch salt shopping list
- The Wet shopping list
- 1/4 cup butter shopping list
- 2 Table. solid vegetable shortening(I usu. do all butter 6 Table.) shopping list
- 1/2 cup brown sugar, packed shopping list
- 2 Table. candied peel, chopped & .mixed(candied ginger) shopping list
- 1/2 cup raisins (I use currants) shopping list
- the grated rind of a lemon shopping list
- 1 egg, lightly beaten shopping list
- 6 Table. milk shopping list
- Note--British Mixed Spice- ingredient found in British recipes for baked goods, meat dishes and casseroles. Clingerman says that allspice is a satisfactory substitute, but this homemade combination "is better". I agree with her. shopping list
- 1 Table. cloves shopping list
- 1Table. mace shopping list
- 1 Table. ground nutmeg shopping list
- 1 Table. coriander seeds shopping list
- 1 Table. allspice berries shopping list
- a small piece of cinnamon stick shopping list
- Grind the spices to a fine powder. Keep in an airtight jar. shopping list
How to make it
- In a large bowl, whisk together the dry ingredients. Cut in 1/4 cup of butter and the veg. shortening until mixture looks like bread crumbs. Stir in the rest of the ingredients. Do not over-stir.
- Divide the dough into 8 portions, and shape each into a slightly flattened ball. Place on a greased baking sheet or parchment or silpat. Space 1 1/2 inches apart. Bake at 400 degreees for 15 minutes or until pale golden and firm. Somebody put the teakettle on! Cool on a rack. Enjoy!
