Ingredients
  • JUNK:
  • Small bowl
  • Cast Iron Skillet
  • Cookie Sheet
  • Aluminum Foil
  • INGREDIENTS:
  • Warm Water
  • 4 English muffins, split.
  • 1 Jar Mazzetta “ Napa Valley Bistro Homemade-Style Marinara” sauce, mezzetta.com or you can use your fave.
  • 2 Hot Italian sausage links, I believe hotter is better
  • 1 small package Gallo sliced pepperoni
  • 1 can black olives, sliced
  • 1 Package dried shitake mushrooms, reconstituted and sliced
  • 1 can artichoke hearts
  • 2 cups grated mozzarella cheese
  • 2 cups grated parmesan cheese
  • Anchovies
  • Crushed red pepper

Directions
  1. Preheat oven to 400F
  2. Put warm water in small bowl and reconstitute shitake mushrooms per package directions, slice into small pieces that look the right size on your English muffin.
  3. Remove Italian sausage from casings, break up and thoroughly cook until browned in cast iron skillet
  4. Stack and quarter pepperoni slices
  5. Line cookie sheet with aluminum foil
  6. Place 8 English muffin halves on the cookie sheet, sliced side up
  7. Liberally spoon marinara sauce on the muffins
  8. Top with cooked Italian sausage, pepperoni, olives, mushrooms, artichoke hearts, mozzarella cheese, parmesan cheese, and anchovies.
  9. Bake in oven for 20 minutes
  10. Broil until cheese starts to brown slightly
  11. Remove from oven, sprinkle with crushed red pepper, and serve hot.

I'm always ready for pizza. I used to make pizza out of english muffins when my kids were young and they got to make their own pizza; they loved it. Thanks for the memories,
