Scalloped Corn Recipe
This is a perfect addition to ham or turkey. We serve it throughout the year but it's always a Thanksgiving and Easter for our family.

Ingredients
  • 1 egg
  • Salt to taste
  • Pepper to taste
  • 1 can (15 ounce) cream-style corn
  • 1 can (15 ounce) golden whole kernel corn (drained, but reserve 3 tablespoons liquid)
  • Butter or margarine
  • 1/3 cup half and half
  • 24 to 30 soda crackers, crushed (reserve an adequate amount for topping)

Directions
  1. Preparation
  2. Beat egg in a bowl with a fork until frothy.
  3. Blend in seasonings, reserved liquid and corn.
  4. Add chunks of butter (about 2 tablespoons), cream, and cracker crumbs; mix well.
  5. Turn into a buttered 1 quart casserole.
  6. Top with reserved crumbs and dot generously with butter.
  7. Bake at 350 F for 30 minutes.

Alterations


I add 1/4 cup of flour, use 2 cans cream corn (and NO WHOLE CORN), plus 2 T. sugar and don't do the crackers.
