Feisty Chicken Fajitas Recipe

Ingredients

2lbs boneless, skinless chicken breast (cut into cubes or strips)

2 medium white onions

2 large green bell peppers

fresh or canned mushrooms

2 tbsp vegetable or olive oil

2 tsp ground cumin or whole cumin seed

1 1/2 tsp crushed dried oregano

1/4 tsp crushed red pepper flakes

1 tsp garlic salt

1/2 tsp black pepper

1-2 limes and squeeze for the juice (fresh) or 4tbsp lime juice

(all items are up to your discretion, use more or less, depending on your tastes, I like a lot of sauteed veggies in mine!)

Tortilla shells of your choice

Extras: (for garnishment)

Queso cheese or grated cheese of your choice

Salsa

Spanish rice

lettuce

tomato

Directions

Combine spices (except lime juice) and set aside

Slice onions, peppers, and mushrooms into strips or chunks (depending on preference) and saute in the oil on a medium-high heat until they begin to caramelize

Add cubes/strips of chicken and lime juice to mixture and sear chicken (be sure to flip it constantly, you don't want it to burn and you still want it tender, not rubbery)

after the chicken is done, take your spices and sprinkle all over veggie/chicken mixture- stir well to evenly coat the dish

Remove from heat
