Leftover Turkey Gumbo

- at least 4 cups of leftover turkey or more shopping list
- 1 16 oz. bag of frozen okra shopping list
- 1 lb. of andouille sausage shopping list
- 2 chopped onions shopping list
- 1 chopped bell pepper shopping list
- 3/4 cup of dry roux shopping list
- 6 cans of chicken broth shopping list
- 3 cans of water shopping list
- salt, pepper and creole seasoning shopping list
- WATCH THE salt after adding the broth shopping list
How to make it
- Saute onions and bell pepper until wilted
- Add frozen okra and stir often, for about 5 mins
- Add sliced andouille sausage and let it cook about 5 mins
- Add the dry roux along with about a cup of water
- Mix well and let it simmer for about 5 mins
- Add the turkey and cans of broth
- Add the water and bring to a boil
- Add seasonings to taste
- Then lower to simmer for about an hour and a half.
- Serve over rice.
