Sweet Onion Marmalade Recipe
This is a recipe I make at Christmas every year and give as gifts. Everybody loves this. It is good over pork, chicken, beef or seafood, but is also good as an appetizer spread over toast points or crackers. Enjoy

Ingredients
  • 2-1/2 pounds sweet onions
  • 1-1/2 cups apple juice
  • 3/4 cup red wine vinegar
  • 1 tablespoon finely minced fresh garlic
  • 2 teaspoons rubbed sage
  • 1 teaspoon salt
  • 1/2 teaspoon ground white pepper
  • 1/2 teaspoon yellow mustard seeds
  • 1/4 teaspoon crushed red pepper flakes
  • 4 cups granulated sugar
  • 1/2 cup firmly packed light brown sugar
  • 1 box sure jell pectin
  • 1 teaspoon butter

Directions
  1. Wash 7 half pint canning jars and keep hot until needed.
  2. Prepare 2 piece canning lids as manufacturer directs.
  3. Peel onions then create strips 1/4" thick and 1-1/2” long then cut each onion into quarters.
  4. Cut crosswise down through each quarter chunk every 1/4”.
  5. Cut enough onion to measure 7 cups.
  6. Place prepared onions in a heavy bottomed pot.
  7. Stir in juice, vinegar, garlic, sage, salt, pepper, mustard and pepper flakes and mix thoroughly.
  8. Measure granulated sugar into a bowl then remove 1/4 cup and set aside in a small bowl.
  9. To the larger amount of granulated sugar add brown sugar and mix.
  10. To the 1/4 cup of granulated sugar stir in the pectin.
  11. Stir the pectin sugar mixture into the onion mixture in the pot then add butter.
  12. Place pot over high heat then bring mixture to a full rolling boil stirring constantly.
  13. Immediately stir in the remaining sugars.
  14. Bring mixture to a full rolling boil then boil for exactly 5 minutes stirring constantly.
  15. Remove from heat and skim off foam if necessary.
  16. Ladle hot marmalade into 1 hot jar at a time leaving 1/4" head space.
  17. Wipe jar rim with a clean damp cloth then attach lids.
  18. Fill and close remaining jars then process in a boiling water canner for 10 minutes.
  19. Remove and let cool overnight on the counter without disturbing the jars.
