Ingredients
  • 4 - boneless, skinless chicken breasts, trimmed of that yucky stuff
  • 8 oz brick of cream cheese, softened
  • 3-4 leaves, fresh basil, minced
  • 1 tbsp dried oregano
  • 3 cloves garlic, minced
  • 4 strips bacon
  • 2 tbsp olive oil
  • 1 c panko crumbs
  • 1/2 c flour
  • 1/4 c fresh finely ground asiago cheese
  • 1 egg, beaten with a dribble of water to thin it

Directions
  1. Filet chicken breasts and/or flatten with a mallet or rolling pin to 1/4" in thickness
  2. Blend garlic, basil, oregano (and salt & pepper to taste) with softened cream cheese
  3. Spread cream cheese mixture over entire flattened breast, then roll up jellyroll style, securing with toothpicks (count them so you know how many to look for later!)
  4. Heat oil in non-stick skillet
  5. Preheat oven to 350
  6. Mix asiago cheese with panko crumbs in a shallow bowl
  7. In another shallow bowl, dredge rolled up chicken in flour, then in another, dip in beaten egg
  8. Roll and pat panko crumbs onto breasts, then place in hot oil in skillet.
  9. Let brown on each side about 5 minutes til golden
  10. Carefully wrap bacon diagonally around each breast and place in an ovenproof casserole dish
  11. Bake for 35-40 min.
  12. Place under broiler briefly to crisp bacon
  13. Serve with angel hair pasta
