How to make it

  • Filet chicken breasts and/or flatten with a mallet or rolling pin to 1/4" in thickness
  • Blend garlic, basil, oregano (and salt & pepper to taste) with softened cream cheese
  • Spread cream cheese mixture over entire flattened breast, then roll up jellyroll style, securing with toothpicks (count them so you know how many to look for later!)
  • Heat oil in non-stick skillet
  • Preheat oven to 350
  • Mix asiago cheese with panko crumbs in a shallow bowl
  • In another shallow bowl, dredge rolled up chicken in flour, then in another, dip in beaten egg
  • Roll and pat panko crumbs onto breasts, then place in hot oil in skillet.
  • Let brown on each side about 5 minutes til golden
  • Carefully wrap bacon diagonally around each breast and place in an ovenproof casserole dish
  • Bake for 35-40 min.
  • Place under broiler briefly to crisp bacon
  • Serve with angel hair pasta
