  • 1 1/2 pounds premium white chocolate or confectioners' coating
  • 1 (14-ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
  • Dash salt
  • 1 1/2 teaspoons vanilla extract
  • 1 cup chopped nuts

Directions
  1. In heavy saucepan, over low heat, melt chocolate with EAGLE BRAND® and salt.
  2. Remove from heat; stir in vanilla and nuts. Spread evenly into wax paper lined 8- or 9-inch square pan.
  3. Chill 2 hours or until firm. Turn fudge onto cutting board, peel off paper and cut into squares.
  4. Store leftovers tightly covered at room temperature.

Alterations


Many people have said they don’t like white chocolate because it tastes waxy, but in all probability they were not eating real white chocolate but a lesser quality substance called a confectioners coating. A confectioners coating does not contain the cocoa butter. In place of the cocoa butter they have used a vegetable oil. Real white chocolate does not have a waxy taste.

Working with real chocolate takes skill & careful attention to temperatures, humidity and other factors, where as working with a confectioners coating is something someone can do at home with little problem. In fact most home candy makers (getting little buttons at a craft store) are actually using a confectioners coating without knowing it.
