Rich Cranberry Almond Coffee Cake

- 1 8oz package of cream cheese (room temp) shopping list
- 1 C butter (room temp) shopping list
- 1 1/2 C sugar shopping list
- 1 1/2 Tablespoons vanilla extract shopping list
- 4 lrg eggs shopping list
- 2 1/4 C all purpose flour (divided) shopping list
- 1 1/2 teaspoons salt shopping list
- 2 C fresh or frozen cranberries shopping list
- 1 C sliced almonds shopping list
- powdered sugar for dusting shopping list
How to make it
- Preheat oven to 350
- In a mixing bowl beat cream cheese, butter, sugar, and vanilla extract until smooth.
- Add eggs one at a time, mixing well after each addition.
- Combine 2 cups of sifted flour, baking powder, and salt to batter.
- Mix remaining flour with cranberries and nuts and fold into batter.
- Pour into a greased fluted pan, and give the pan a little shake so the batter distributes evenly.
- Bake at 350 for 65-70 min or until cake tests done.
- Let rest for 10 min before turning it upside down on a plate and dust with powdered sugar.
