OREGON APPLE BROWN BETTY This recipe came from an estate sale. I obtained it when I purchased the family collection from the Marquees Estate in Dallas, Texas in 1994.

Ingredients
  • 1/3 cup butter melted
  • 2 cups soft bread crumbs
  • 6 cups apples pared cored and sliced
  • 1/2 cup brown sugar
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cinnamon
  • 1 tablespoon lemon rind grated
  • 2 tablespoons lemon juice
  • 1/4 cup water

Directions
  1. Preheat oven to 375.
  2. Toss bread crumbs with melted butter and arrange 1/3 crumb mixture in a greased casserole.
  3. Cover with 1/2 apples and 1/2 combined mixture, sugar, nutmeg, cinnamon and rind.
  4. Blend well then cover with 1/3 bread mixture, remaining apples and remaining combined mix.
  5. blending well.
  6. Spoon on the lemon rind, lemon juice and water combined and well blended.
  7. Top with remaining crumbs then cover and bake 30 minutes.
  8. Uncover and bake 30 minutes longer.
