Pork Posole

- 1-1/2 pounds pork shoulder shopping list
- 1/2 white onion with 2 cloves inserted shopping list
- 2 cloves garlic peeled shopping list
- 5 whole black peppercorns shopping list
- 1/2 teaspoon whole cumin seed shopping list
- 1/4 teaspoon oregano shopping list
- 1 white onion chopped shopping list
- 2 cloves garlic chopped shopping list
- 2 tablespoons vegetable oil shopping list
- 1 teaspoon black pepper shopping list
- 1 teaspoon ground cumin shopping list
- 1/2 teaspoon cloves shopping list
- 1/2 teaspoon ground cayenne shopping list
- 4 cups canned white hominy drained and rinsed shopping list
- 5 cups pork broth from cooking pork shoulder shopping list
- 1 cup poblano pepper roasted and peeled shopping list
- 2 teaspoons salt shopping list
- 2 whole jalapenos chopped shopping list
How to make it
- Place meat in large saucepan and just cover with lightly salted water.
- Add onion, garlic, peppercorns, cumin seed and oregano.
- Bring to boil over medium heat then skim off any foam that rises.
- Reduce heat then cover and simmer 45 minutes.
- Remove meat and broth reserving broth.
- Sauté chopped onion and garlic in oil until translucent.
- Add remaining spices and stir for one minute.
- Cut reserved pork into 1 inch cubes and add to pan.
- Stir in hominy, broth, green chilies and jalapenos.
- Cook at a simmer covered for 1 hour then degrease stew and serve.
