Pork Posole Recipe
This is a very tasty pork stew that is so tender, tasty and comforting. Great for a cold winter's night.

Ingredients
  • 1-1/2 pounds pork shoulder
  • 1/2 white onion with 2 cloves inserted
  • 2 cloves garlic peeled
  • 5 whole black peppercorns
  • 1/2 teaspoon whole cumin seed
  • 1/4 teaspoon oregano
  • 1 white onion chopped
  • 2 cloves garlic chopped
  • 2 tablespoons vegetable oil
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cloves
  • 1/2 teaspoon ground cayenne
  • 4 cups canned white hominy drained and rinsed
  • 5 cups pork broth from cooking pork shoulder
  • 1 cup poblano pepper roasted and peeled
  • 2 teaspoons salt
  • 2 whole jalapenos chopped

Directions
  1. Place meat in large saucepan and just cover with lightly salted water.
  2. Add onion, garlic, peppercorns, cumin seed and oregano.
  3. Bring to boil over medium heat then skim off any foam that rises.
  4. Reduce heat then cover and simmer 45 minutes.
  5. Remove meat and broth reserving broth.
  6. Sauté chopped onion and garlic in oil until translucent.
  7. Add remaining spices and stir for one minute.
  8. Cut reserved pork into 1 inch cubes and add to pan.
  9. Stir in hominy, broth, green chilies and jalapenos.
  10. Cook at a simmer covered for 1 hour then degrease stew and serve.
