Lemon Oat Bars

- lemon Custard: shopping list
- 8 tbsp sugar shopping list
- 1 cup of vanilla soy milk shopping list
- 2 tbsp corn starch shopping list
- 1/2 cup margerine shopping list
- juice from half a lemon shopping list
- lemon zest shopping list
- 2 tbsp orange juice shopping list
- Dash of allspice or nutmeg shopping list
- Crust: shopping list
- 1 1/4 cup wheat flour shopping list
- 1 cup oats shopping list
- 1/2 cup brown sugar shopping list
- 1/2 cup margerine (softened) shopping list
- 1/4 cup shredded coconut shopping list
- 1/4 tsp baking powder shopping list
How to make it
- pre-heat oven to 375 degrees
- In a sauce pan mix the soymilk, sugar, and corn starch together. (the soy milk should be cold so the corn starch disolves)
- Put the sauce pan on the stove on low and add the other ingredients.
- In a bowl mix all the crust ingredients together
- Grease a pie pan and press half the crust into the pan
- Stir the custard mixture a bit, the butter should start to melt
- Put the pie pan in the oven for 10 minutes
- Continue stiring the custard, eventually it will thicken up like pudding
- Pull the crust out of the oven and let it cool a bit
- When the custard is ready, pour it into the pie crust
- Sprinkle the rest of the crust on top of the custard
- Bake the whole thing for 20 minutes
- Refridgerate and eat chilled
