Ingredients

How to make it

  • Puree 2 cans of beans and a can of broth together in a blender. Set aside.
  • Sautee onion,carrots,bell pepper, and garlic in oil until tender and carmalized. Add puree and all other ingredients.
  • Simmer 30 min or more.
  • Stir a huge heaping tablespoon of sour cream,avacadoes, chopped cilantro directly into a big hot soupbowl of soup. ENJOY!!!

    I don't unfortunatly, but it wouldn't be too hard to figure out with an online calorie counter. according the the calorie counter on mydailyplate.com, the entire recipes roughly translates to 2,469 Calories, 42 grams of fat, 544 grams of carbs(non sugar),and 163grams of protein before dding the garnish.
    So depending on the amount of serving you get out of it, you can divide the totals accordingly :)

    Thanks! it's actually a recipe for people who have had weight loss surgery so corn can be iffy as ar as digestion in the first couple of weeks. Plus for a normal diet you can skip the 2nd puree. I also personally prefer fresh or frozen vs. canned but this is a recipe from a friend and I copied it as-is :) Good luck with you diet! I think most ppl feel like they need one in the new year after all the yummy food during the holidays!

    I love avocados & black beans---and I have been thinking about going on a "soup for lunch" diet the last couple of days! Perfect timing to see your recipe.

    The only thing I would do differently is use fresh corn, even frozen would be better than canned, just a suggestion ;-)
