How to make it

  • Beat the 2 eggs in a bowl
  • Add the cheese, stir together
  • Add the oleo or butter, melted
  • Stir ingredients together
  • Add the cornbread mix and milk alternating in small amount, mixing well after each addition
  • Add the onion flakes, mix
  • Add the whole corn with the liquid
  • Add the cream corn
  • Mix well
  • Pour into greased flat casserole pan of 8 1/2 x 11 or slightly larger.
  • Top with chopped fresh parsley
  • Bake at 375 for 40-45 minutes until firm & browned

    I use the small box of Jiffy Corn Bread mix. I will look at the oz amount and post later. Much easier to use the mix than to mix your own. I have used other brands without any problems.

    How many ounces is the cornbread mix, or can you make a recommendation as to brand? I really want to try this one. THX :)
