Judys Meatballs

- 2 lbs lean ground beef ( I used 1 lb ground pork and 1 lb ground turkey) shopping list
- 1 egg, beaten shopping list
- 1 cup crushed cornflakes shopping list
- 1/2 cup applesauce shopping list
- 1 onion, finely chopped shopping list
- 1 clove garlic, crushed shopping list
- 1 1/2 teaspoons salt shopping list
- Freshley ground pepper shopping list
- 1 medium onion, finely chopped shopping list
- 1/4 cup butter shopping list
- 1/4 cup flour shopping list
- 1/3 cup tomato paste shopping list
- 1/4 cup chili sauce or catsup shopping list
- 3 cups beef bouillon or broth shopping list
- 2 tablespoons beef concentrate shopping list
- 1 tablespoon worcestershire sauce shopping list
- 2 tablespoons chopped parsley shopping list
- 1 clove garlic, crushed shopping list
- 1 bay leaf shopping list
- 1 teaspoon basil shopping list
- 4 peppercorns shopping list
- 12-14 button-size mushrooms shopping list
- 1/2 cup dry white wine ( I used red b/c I was out of white) shopping list
How to make it
- Directions for the first 8 ingredients:
- Preheat oven to 350 degrees
- Gently, but thoroughly, combine the first 8 ingredients and form into bite-size meatballs, placing them in one layer in a large, shallow baking dish. Note that the more tenderly you handle the meatballs, the tenderer they will be.
- For the remaining the ingredients:
- In a 12-inch skillet, over medium heat saute onion in butter until soft. Add flour and cook until golden brown, stirring with a flat whisk. Add remaining ingredients except mushrooms and wine, and cook slowly until thickened, stirring from time to time.
- Place mushrooms and wine in a small saucepan, and cook over high heat for 5 minutes. Stir in sauce. Pour sauce over meatballs and bake, uncovered, for 1 hour. Serve in a chafing dish, if you'd like.
