  • 2 lbs lean ground beef ( I used 1 lb ground pork and 1 lb ground turkey)
  • 1 egg, beaten
  • 1 cup crushed cornflakes
  • 1/2 cup applesauce
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 1 1/2 teaspoons salt
  • Freshley ground pepper
  • 1 medium onion, finely chopped
  • 1/4 cup butter
  • 1/4 cup flour
  • 1/3 cup tomato paste
  • 1/4 cup chili sauce or catsup
  • 3 cups beef bouillon or broth
  • 2 tablespoons beef concentrate
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons chopped parsley
  • 1 clove garlic, crushed
  • 1 bay leaf
  • 1 teaspoon basil
  • 4 peppercorns
  • 12-14 button-size mushrooms
  • 1/2 cup dry white wine ( I used red b/c I was out of white)

Directions
  1. Directions for the first 8 ingredients:
  2. Preheat oven to 350 degrees
  3. Gently, but thoroughly, combine the first 8 ingredients and form into bite-size meatballs, placing them in one layer in a large, shallow baking dish. Note that the more tenderly you handle the meatballs, the tenderer they will be.
  4. For the remaining the ingredients:
  5. In a 12-inch skillet, over medium heat saute onion in butter until soft. Add flour and cook until golden brown, stirring with a flat whisk. Add remaining ingredients except mushrooms and wine, and cook slowly until thickened, stirring from time to time.
  6. Place mushrooms and wine in a small saucepan, and cook over high heat for 5 minutes. Stir in sauce. Pour sauce over meatballs and bake, uncovered, for 1 hour. Serve in a chafing dish, if you'd like.
