Ingredients
  • 1/4 cup butter, softened
  • 2 1/4 cups powdered sugar, sifted
  • 3/4 cup chocolate covered espresso beans, crushed
  • 3 tbls. Coffee liqueur, I use Kahlua
  • 1/8 tsp. salt
  • 3 cups milk chocolate chips
  • 3 tbls. shortening

Directions
  1. In mixing bowl, beat butter at medium until creamy
  2. Gradually add powdered sugar, beating until smooth
  3. Stir in espresso beans, Coffee liqueur, and salt
  4. Shape with tsp. into balls and slightly flatten
  5. Chill until firm
  6. Melt chocolate chips and shortening in saucepan over very low heat, stirring until smooth
  7. In 48 1 1/2 inch paper candy cups, add 1/2 tsp. melted chocolate (If possible, place cups in mini muffin tins)
  8. Coat bottom totally with chocolate
  9. Put espresso ball in each cup
  10. Spoon chocolate over ball, covering completely
  11. Chill until firm
