Crunchy Espresso Cups

- 1/4 cup butter, softened shopping list
- 2 1/4 cups powdered sugar, sifted shopping list
- 3/4 cup chocolate covered espresso beans, crushed shopping list
- 3 tbls. coffee liqueur, I use Kahlua shopping list
- 1/8 tsp. salt shopping list
- 3 cups milk chocolate chips shopping list
- 3 tbls. shortening shopping list
How to make it
- In mixing bowl, beat butter at medium until creamy
- Gradually add powdered sugar, beating until smooth
- Stir in espresso beans, Coffee liqueur, and salt
- Shape with tsp. into balls and slightly flatten
- Chill until firm
- Melt chocolate chips and shortening in saucepan over very low heat, stirring until smooth
- In 48 1 1/2 inch paper candy cups, add 1/2 tsp. melted chocolate (If possible, place cups in mini muffin tins)
- Coat bottom totally with chocolate
- Put espresso ball in each cup
- Spoon chocolate over ball, covering completely
- Chill until firm
