Festive Berry Skewers With Lemon Creme

This was one of the appetizers I served at a man's retirement luncheon today. Visually appealing and so easy to make. The dip tastes just like cheesecake!
Ingredients
- fresh strawberries shopping list
- fresh pineapple, cut in triangle chunks (must be fresh, not canned!) shopping list
- fresh blackberries shopping list
- Fresh Star fruit, sliced thin for garnish (if you can't find/get star fruit, make butter cookies instead and use a star cookie cutter!) shopping list
- bamboo skewers shopping list
- 16 oz Crème fraîche shopping list
- 16 oz quality brand cream cheese shopping list
- sugar to taste shopping list
- zest of 2 lemons shopping list
- 1 tablespoon pure vanilla extract shopping list
How to make it
- Skewer fruit in order as in photo.
- For dip: Place all ingrediants in a mixing bowl and whip using mixer until fluffy (if it is too thick, you may add cream or milk to loosen it)
- To serve: Place star fruit garnish (or cookies) on the edge of a large platter. Place dip in bowl in the center and arrange the fruit skewers around in a circle. Garnish dip with additional star fruit or cookie. Dip away!
