Tilapia With Grapefruit And Spinach

- 2 tilapia fillets shopping list
- 1 grapefruit shopping list
- 1/4 cup white wine (I just used cooking wine) shopping list
- 2 cloves garlic shopping list
- 1 tsp ground mixed pepper shopping list
- 1 tsp curry shopping list
- 1 TBSP olive oil shopping list
- fresh spinach shopping list
- 2 TBSP sour cream shopping list
- 1 TBSP ground red pepper shopping list
- 2 C cooked rice shopping list
How to make it
- Preheat oven to 350.
- Peel grapefruit and remove flesh from membranes over a bowl to catch the juice.
- Put the flesh aside.
- Pour juice into a small saucepan.
- Add the White Wine.
- Bring to a boil.
- Crush and add the garlic.
- Let simmer for about a minute.
- Add the mixed pepper, curry, and olive oil.
- Simmer for about a minute. Remove from heat.
- Oil an 8x8 baking dish... I used the Pam Spray.
- Cover bottom of baking dish with spinach.
- Put tilapia fillets on top of the spinach.
- Rub one TBSP of sour cream over each fillet.
- Put grapefruit flesh on and around the fillets.
- Pour juice mix over all.
- Sprinkle red pepper over all.
- Cover with foil. Bake for 20 minutes.
- Serve over a bed of rice.

This sounds delicious to me I would open a bottle of good drinking wine that I liked and have a glass with the meal then the flavors would automatically pare together.
