Ingredients
  • 100g yellow or red lentils
  • 1 egg white
  • 115g sugar*
  • 90g cream cheese
  • 100g unsweetened apple puree
  • 170g all-purpose flour
  • 190g bircher muesli
  • 1tsp baking powder
  • 1tsp baking soda
  • 2/3tsp salt
  • 1tsp cinnamon

Directions
  1. preheat the oven to 180C/350F. Get the baking sheet ready, either greased or lined with wax paper.
  2. boil the lentils until they're mushy and drain the extra water. using a stick blender, mash. Blend in sugar, egg white, cream cheese and apple puree.
  3. in another container mix the remaining ingredients and fold into the wet mixture.
  4. using an ice cream spoon or two spoon make 1 tablespoon balls.
  5. cook for about 15-18 mins, or until they're nicely brown on top. Let cool down on a wire rack. Store in an airtight container in the refrigerator or preferably keep frozen in the freezer. As they contain almost no fat they get stale pretty quickly, it's advised that you take them out just about 15-20 mins before serving to let thaw and then serve.then they remain sof and fresh. When stale they're really dry, so crumble them into ice-creams, custards, trifles, etc. or dip in some hot cocoa and eat like wet cakes.
  6. *this amount of sugar makes barely sweet cookies, so double it if you want it really sweet.
  7. Enjoy!
