Zucchini Relish Recipe

Ingredients

2 cups chopped zucchini (about 3 med )

1 cup chopped onion (1 med )

1/2 cup chopped sweet green pepper (1 sm )

1/2 cup chopped sweet red pepper

2 Tsp. salt

1 3/ 4 cup sugar

1 cup cider vinegar

2 tsp. celery seed

1 tsp. mustard seed

Directions

Combined zucchini, onion, peppers sprinkle with salt, cover with cold water let stand for 2 hours,drain and rinse thoroughly.

Combined remaining ingrediences bring to boil, add zucchini mixture and simmer for 10 min. fill steril jars and can if you wish, it never lasts that long around my family.

Makes about 4 half pints.
