Sinful Nut and Cherry Pilaf

- 2 tablespoons sunflower oil shopping list
- 1 onion thinly sliced shopping list
- 1 tablespoon butter shopping list
- 1 pinch turmeric shopping list
- 2 cups long-grain brown basmati rice shopping list
- 1/4 cup unblanched almonds shopping list
- 3 tablespoons pine nuts shopping list
- 3 celery stalks finely sliced shopping list
- 1/2 pound fresh or frozen cherries pitted shopping list
- 1-1/2 teaspoons ground cinnamon shopping list
- 1 tablespoon lemon juice shopping list
- 1/2 cup chopped scallions shopping list
- 2 tablespoons chopped fresh dill shopping list
- 2 teaspoons freshly ground black pepper shopping list
- 1 teaspoon sea salt shopping list
How to make it
- In a heavy bottomed saucepan heat oil then add onion and cook gently for 10 minutes.
- Add butter, turmeric, rice, almonds and pine nuts to onion and stir 3 minutes.
- Add celery, cherries and cinnamon then add 3-1/4 cups water and bring to a boil.
- Stir once then cover and reduce heat to the lowest setting and simmer 35 minutes.
- When rice is cooked stir in lemon juice, scallions and fresh herbs.
