  • 2 tablespoons sunflower oil
  • 1 onion thinly sliced
  • 1 tablespoon butter
  • 1 pinch turmeric
  • 2 cups long-grain brown basmati rice
  • 1/4 cup unblanched almonds
  • 3 tablespoons pine nuts
  • 3 celery stalks finely sliced
  • 1/2 pound fresh or frozen cherries pitted
  • 1-1/2 teaspoons ground cinnamon
  • 1 tablespoon lemon juice
  • 1/2 cup chopped scallions
  • 2 tablespoons chopped fresh dill
  • 2 teaspoons freshly ground black pepper
  • 1 teaspoon sea salt

Directions
  1. In a heavy bottomed saucepan heat oil then add onion and cook gently for 10 minutes.
  2. Add butter, turmeric, rice, almonds and pine nuts to onion and stir 3 minutes.
  3. Add celery, cherries and cinnamon then add 3-1/4 cups water and bring to a boil.
  4. Stir once then cover and reduce heat to the lowest setting and simmer 35 minutes.
  5. When rice is cooked stir in lemon juice, scallions and fresh herbs.
