How to make it

  • Bloom the gelatin by sprinkling over the cold water and let sit for 5 minutes.
  • Combine cream and sugar in a saucepan. Bring to a simmer over low heat until the sugar dissolves. Remove from heat.
  • Heat the gelatin over a bain marie until it dissolves. Whisk the gelatin into the whipping cream mixture and combine with sour cream, vanilla and lemon juice until smooth.
  • Pour into a nice glass bowl or parfait dessert glasses.
  • Cover and chill for about an hour or until it sets up.
  • For Berry Topping:
  • Warm 1/2 cup of Red Seedless Raspberry Jam in the Mircowave or On the Stovetop (not hot) and Stir Making A Sauce
  • Now Mix All of the Berries in A Bowl Together, Pour All of the Sauce Over the Top and Gently Mix until Berries Are Covered with Sauce.
  • When Russian Cream is Set and Ready to Serve Spoon the Sauce Over The Tops of Your Parfaits!

  • If You Really Wanna Be A Hit---Splash Just A Little Champagne Over The Top of the Berries) But You Didn't Here That From Me!
