Lulus LA Lower Alabama Caviar Recipe
This was in a newspaper that Dad brought back from one of their vacations a couple of yers ago. On the Alabama Bureau of Tourism and Travel's list of "100 Dishes to Eat in Alabama Before You Die." in 2005. Allow to chill 24 hours before serving

Ingredients
  • 3 (15-ounce) cans black-eyed peas, rinsed and drained
  • 1/4 cup chopped red onion
  • 3 tablespoons each chopped green, red and yellow bell pepper
  • 1/2 cup quartered cherry tomatoes
  • 1/4 cup chopped parsley
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 tablespoons granulated sugar
  • Salt and pepper

Directions
  1. Combine black-eyed peas, onion, peppers, tomatoes, parsley, vinegar, oil and sugar.
  2. Season with salt and pepper.
  3. Marinate for 12 to 24 hours before serving.

Just Had 'Redneck Caviar' Last Night At New Years Eve Party. Ya Just Can't Stop Eating This.


Love my redneck caviar, too. I add a bit of Crystal hot sauce and use a chopped pickled jalapeno to the party, but it is good stuff. Yummmy.
