Spicy 2 Bean Turkey Soup Recipe
This is my version of a low fat turkey soup. Very filling.

Ingredients
  • 1 chopped onion
  • 3 cloves garlic chopped
  • 1 can kidney beans
  • 1 can navy beans
  • 1 lb ground turkey
  • 2 cans italian style diced tomatoes
  • 1 large can tomato puree
  • 1/2 teaspoon of chicken boulion granuals
  • 3 cups of water
  • 1 sliced Zuchinni
  • 2 teaspoons orageno
  • 1/2 teaspoon thyme
  • 1 teaspoon of salt
  • 1/2 teaspoon of crushed red pepper

Directions
  1. spray a soup pot with pam
  2. sautee onions and garlic till soft
  3. add in ground turkey cook until no longer pink (breaking up pieces)
  4. add remaining ingredients and bring to a boil
  5. cook on low or simmer for about 45 minutes

When I made it originally I put in 1 teaspoon of thyme and found it just too overpowering. Also, might be good with a little brown rice added in.


I love all that garlic is that fresh thyme laurie?
