How to make it

  • Put a little oil in a frying pan and sear the meat. Then remove and lightly brown the onions then the mushrooms.
  • Place all in a saucepan with 8 - 12 fl.oz. of beef stock -fresh or from a can.
  • Stew for 1.5 - 2 hours until the meat is very tender.
  • Put steak and gravy in pie dish, putting a pie funnel (if you have one) in the center to release the steam.
  • Roll out the pastry 1inch larger than the pie dish and cut a half inch wide strip from edge. Lay this strip around the edge of the pie dish first wetting the rim, press it to make it stick. Lay pastry over the pie and cut a hole in the center for the funnel.
  • Press around edge to make pattern. Any remaining pastry can be cut in leaves etc. to decorate the top. Brush with beaten egg. Cook for 30 minutes at 400 degrees.

    Sounds an awesome pie and I will try. I can cook but not much pastry skills, however I came up with this. I living in Asia really want a pie from time to time, woke up in morning with this on my mind.
    Now all of this is shop bought short crust pastry and the filling from a street hawker so do not expect genius here just a little twist. Usual some pie dishes buttered up and short crust for base, top measured out to cover for lids. Now the filling my idea was Larb Moo, its an Issan, Laos, Thai dish really spicy ground pork. It predominately ate with rice of course but I thought try it as a pie filling.I would recommend you look recipes online but is pretty easy home make, ground pork, red onion, herbs of choice,garlic, go nutz on the chilli birds eye are fine and a splash of lime juice.
    Pack u cases full of filling no need dry bake and egg wash the lids...its a serious spicy pie and work so well with buttery pastry as it just balance all that heat...........
    I call it Scotch pie on Steroids and next time I make will take a pix.
