This is a very simple coconut pie that ends up tasting like cheese cake.

Ingredients
  • 1 pkg. (3 oz.) cook & serve coconut cream pudding/pie filling
  • 1 pkg. (8 oz.) cream cheese, softened
  • 1 graham cracker crust
  • 1 1/2 cups milk
  • Coconut for garnish

Directions
  1. In a deep bowl, using an electric mixer, combine cream cheese and milk, mixing until well blended.
  2. Add pudding/pie filling
  3. Pour into a med. size sauce pan
  4. Over med. heat, cook until the filling starts to thicken and all cream cheese is melted. About 3 min.
  5. Pour into pie crust
  6. Refrigerate at least 4 hrs. before serving.

I actually made 2 of these pies. The other one was made with Pistachio pudding and I used crushed pretzels for the crust, topping it off with mini-marshmallows that I toasted. If I knew how to send the picture without re-entering the recipe, I would.


Mmmm sounds marvelous! I bet the other pie was good too. Why not post it under the name of Pistachio Pretzel pie? or something so we can see it.....Mmmmm


I'm a coconut fan but the Pistachio was even better. I never thought I would say that about coconut.


Love all of the ingredients. Can't wait to try this!
