I made these cookies on the occasion of our Independence Day.Keeping the colours of Pakistani flag in mind,I iced them in green & white.

Ingredients
  • 125 gm soft butter
  • 1/2 cup castor sugar
  • 1/2 tsp vanilla essence
  • 1/2 tsp baking powder
  • 1 egg
  • 2 1/2 cup plain flour
  • green food colour

Directions
  1. Preheat oven to 180 C.Line baking sheet with parchment paper.
  2. Beat butter and sugar until light and creamy.
  3. Add vanilla and egg and beat well.
  4. Sift flour and baking powder together in a bowl.Now gradually add flour to the butter mixture.
  5. {At this stage,you can add food colour,if using.}
  6. Knead the dough well.Chill for 15 minutes.
  7. Roll out and cut in desired shapes.
  8. Place on baking sheet,lined with paper and bake at 180 C for 12-14 minutes.
  9. Take out and leave for a few minutes on the baking sheet to firm up
  10. slightly,then transfer to a wire rack to cool.
  11. Green Icing:
  12. Place icing sugar(1/2 cup) in a bowl.Add water(1 tbsp) and a few drops of green food colour.
  13. Mix thoroughly with a fork until smooth.
  14. Make sure it is not too runny.If it is,add more icing sugar bit by bit.
  15. Dip the top of cookies in the icing or spread it over each cookie with
  16. a spoon.Let it harden.
  17. Melted chocolate:
  18. Melt the white chocolate by breaking it into a bowl placed over a pan of simmering water.
  19. Pour/spoon the chocolate in the piping bag and decorate over the cooled cookies.Leave to cool until chocolate is set.
