Salmon Cakes With Creamy Dill Sauce recipezaar

- 3 teas. extra-virgin olive oil, divided shopping list
- 1 small sweet onion, finely chopped shopping list
- 1 stalk celery, finely diced shopping list
- 2 Tb.chopped fresh parsley shopping list
- 15 oz.canned salmon, drained or 1 1/2 c. cooked salmon shopping list
- 1 lg. egg, lightly beaten shopping list
- 11/2 teas.Dijon mustard shopping list
- 1/2 t. honey (optional) shopping list
- 11/2 - 13/4 fresh whole wheat bread crumbs shopping list
- 1/2 teas. fresh ground pepper shopping list
- 1 lemon, cut into wedges shopping list
- Creamy dill Sauce shopping list
- 1/4 c. mayonnaise shopping list
- 1/4 c. plain yogurt shopping list
- 2 scallions, finely chopped shopping list
- 1 Tb. lemon juice shopping list
- 1 Tb. finely chopped fresh dill or fresh parsley or fresh cilantro shopping list
- fresh ground pepper shopping list
How to make it
- To make sauce: combine ingredients in a small bowl & mix well. set aside.
- To make salmon cakes: Preheat oven to 450 degrees. coat a baking sheet with cooking spray
- Heat 11/2 teas. oil in a large non stick skillet over medium high heat.
- Add onion & celery; cook, stirring until softened, about 3 minutes. Stir in parsley, remove from heat.
- Put salmon in a medium bowl & flake apart with a fork. Remove bones & skin.
- Add egg, mustard & honey ( if using), mix well
- Add onion mixture, breadcrumbs& pepper, mix well.
- Shape into 8 patties, about 21/2 inches wide
- Heat remaining 11/2 teas. oil in the skillet over medium heat.
- Add 4 patties& cook until the bottoms are golden, 2 to 3 min.
- Using a wide spatula, turn them over onto prepared baking sheet. Repeat with remaining patties.
- Bake til salmon cakes are golden on top & heated thru, 15 - 20 min.
- serve with Dill sauce
- Enjoy!
