I generally culture my yogurt for 12+ hours so it could have a bit more acid than the amount of soda can deal with and I saw no reason to overcome that issue but others may want the acid/alkali balance a little closer to pure water than I do...

Very tasty. I used regular buttermilk for both, and brown sugar for 2nd loaf. both loafs were pastry flour.
I believe that with brown sugar this recipe is closer to the one my great-grand-mother made regularly than anything I have had since.

This bread in so many ways brings me back to my childhood especially when my modifications are applied to more closely match my great-grand-mothers usual style and ingredients.
