Made this again the other night and solved the problem of non-hot jalapenos. Instead of fresh jalapenos I used Penzey's dried chopped ones. Added them right with the popcorn as with the fresh. The Mexican corn is consistently spicy and starts popping right away instead of waiting until all the moisture in the fresh peppers dissapates. Want me to send you some from Penzey's?

Thanks Linda but I never had a problem, when I chop the pepper I use seeds and all. I do know you can't tell how hot a pepper is by looking at it, that's why I say 1-2 You'll smell it when chopping...:)
