Zucchini Crescent Pie

- 4 cups zucchini, thinly sliced shopping list
- 1 cup onions, chopped shopping list
- 2 tbls. butter shopping list
- salt and pepper to taste shopping list
- 2 tbls. parsley flakes, dried shopping list
- 1/4 tsp. garlic powder shopping list
- 1/4 tsp. basil, dried shopping list
- 1/4 tsp. oregano, dried shopping list
- 2 eggs, beaten shopping list
- 2 cups mozzarella cheese, shredded shopping list
- 1 can crescent rolls shopping list
- 2 tsp. Dijon mustard shopping list
How to make it
- Preheat oven to 375
- In skillet over medium high heat, cook zucchini and onion in butter until tender, about 6-8 minutes
- Set aside
- Stir in salt, pepper, parsley, garlic powder, basil, and oregano
- In mixing bowl, mix together eggs and cheese
- Stir in vegetable mixture
- For 12 x 8 baking pan, open crescent rolls and press perforations
- For 10 inch pie pan, separate rolls into triangles and press into pan, sealing perforations
- Pour vegetable mixture over crescent rolls and spread evenly
- Bake for 18-22 minutes or until toothpick inserted center comes out clean
- Let sit for 5 minutes before serving
