Ingredients
  • 4 cups zucchini, thinly sliced
  • 1 cup onions, chopped
  • 2 tbls. butter
  • Salt and pepper to taste
  • 2 tbls. parsley flakes, dried
  • 1/4 tsp. garlic powder
  • 1/4 tsp. basil, dried
  • 1/4 tsp. oregano, dried
  • 2 eggs, beaten
  • 2 cups mozzarella cheese, shredded
  • 1 can crescent rolls
  • 2 tsp. Dijon mustard

Directions
  1. Preheat oven to 375
  2. In skillet over medium high heat, cook zucchini and onion in butter until tender, about 6-8 minutes
  3. Set aside
  4. Stir in salt, pepper, parsley, garlic powder, basil, and oregano
  5. In mixing bowl, mix together eggs and cheese
  6. Stir in vegetable mixture
  7. For 12 x 8 baking pan, open crescent rolls and press perforations
  8. For 10 inch pie pan, separate rolls into triangles and press into pan, sealing perforations
  9. Pour vegetable mixture over crescent rolls and spread evenly
  10. Bake for 18-22 minutes or until toothpick inserted center comes out clean
  11. Let sit for 5 minutes before serving
