  • 1 lb. ground beef -80% lean or less
  • 1/2c parmesan
  • 1/2c italian breadcrumbs
  • 2 Tbsp parsley chopped
  • 1 tsp garlic powder
  • 1 tsp. Kosher salt
  • 2 eggs
  • ----------------------------------------------
  • Marinara Sauce:
  • Ingredients
  • 2 big cans whole peeled tomatoes
  • 1 small can tomato paste
  • 1/2 onion
  • 4 cloves garlic
  • oregano
  • basil
  • rosemary
  • thyme
  • pinch sugar
  • ----------------------------------------------
  • Ziti:
  • Ingredients
  • 1 1/2 boxes Ziti (Rigatone or any tube pasta works as well)
  • 1 big Ricotta cheese
  • 3 or 4 cups shredded mozzarella
  • Romano grated
  • Parmesan grated
  • 6 slices of provolone
  • ----------------------------------------------
  • Final Assembly
  • Ingredients:
  • Big Casserole dish (11x9 ok; 13x9 preferable); Glass or metal works fine

  3. Mix everything together
  4. brown in skillet; will take multiple batches obviously.
  5. This must be done by the time you're adding the tomato sauce to the marinara.

  7. Marinara Sauce:

  9. Chop onion and finely chop garlic
  10. Saute onion and garlic in big pot
  11. In a blender or food processor, blend the tomato cans and tomato paste together (What I do since i have a blender is to blend one can of peeled tomatoes, adding it to the sauted onion and garlic, and then blending the other can with the tomato paste.)
  12. Add tomatoes to onion and garlic
  13. Add the herbs to taste (I usually do 2 Tbsp Oregano and 1 Tbsp everything else(dried))
  14. Add pinch of sugar
  15. Add meatballs
  16. Partially cover
  17. Cook 30-35 min. over low heat stirring occasionally

  19. Ziti:

  21. Preheat oven to 350 F
  22. Boil Ziti to al dente
  23. Mix most of the Ricotta and half the mozzarella with the noodles

  27. Final Assembly:

  29. On the bottom of the dish put a layer of sauce and meatballs
  30. Ziti and cheese mixture goes next
  31. 6 slices of provolone on top of that
  32. From there it just goes Sauce and meatballs, ziti and cheese, sauce and meatballs
  33. Cover with the rest of the mozzarella
  34. Grate parmesan and Romano over the mozzarella
  35. Bake at 350 F for 30 minutes, or until cheese

Love your homemade marinara in this dish (and the flavorful meatballs, too!)...I usually use a jarred sauce, but this looks like it would be worth the effort - nice post, and love the picture...thanks!
