How to make it

  • Drizzle 2 tablespoons of vegetable or corn oil into a 10 1/2" cast iron skillet. heat. holding the whole potatoe in your hand over the skillet and a paring knife in your good hand, cut slices directly into the oiled skillet. if you feel too dangerous with that slice potatoes on a cutting board. after all the potatoes are sliced and in the skillet, sprinkle with black pepper and garlic. turn potatoes every 10 minutes, without smashing or breaking them. at this time also prevent others from trying to help turn the potatoes. sprinkle again with pepper and garlic at each turning until the potatoe slices are nicely browned. blackened, ok. serve on a plate with a side of catsup.

    I grew up on this stuff, except for my Momma used to slice them in thick straws, almost like chunky French fries. Thanks for bringing back the childhood memories! High 5 from me!
